Gluten is a protein and therefore not a FODMAP; it's the exclusion of wheat and its fructan that allows Schar products to be Low FODMAP. Be careful, though, that some Schar products have high FODMAP ingredients added, so please use the filters to make sure you're seeing the appropriate products for your diet.
